Cooking the rendang chicken. Use a large wide-mouthed pan or a wok. Pour in oil and add cardamom(5), star anise(2-3), cinnamon(2-3 inch piece), and the rendang spice paste. Cook the spices with the paste over a very low fire for 1-3 minutes or until they release their aroma(read beginner's tips).
The chicken pieces are seasoned and sautéed with the spice paste, then cooked in coconut milk. The dish is simmered until the sauce is almost fully evaporated and sticks to the meat. Once done, rendang ayam is typically accompanied by steamed white rice on the side.
